This recipe is a simple everyday treat, requiring only five ingredients.
It's a fantastic snack option, especially since it doesn't contain any added sugars.
Feel free to get creative with different berries - raspberries, blackberries, blueberries, or a mix of them all work well.
Ingredients:
- 1 cup Dates
- 1 cup Cashews
- 1/2 cup Almonds
- 1 1/4 cups Frozen Raspberries
- 3 teaspoons of Mega 8 powder
- 1/2 cup Desiccated Coconut
- A generous pinch of sea salt
- Options: 4 teaspoons Wonder Foods PHGG (for extra gut health)
Instructions:
1) If you're using dried dates, soak them in warm water for 5 minutes to soften them. Skip this step if you're using fresh dates.2) Use a food processor or blender to finely chop the cashews and almonds.
3) Drain the dates after soaking. Add them, frozen raspberries, the Mega 8 powder, and a pinch of salt to the food processor. Pulse until everything is well combined.
4) Spread the desiccated coconut on a medium-sized plate. Scoop the mixture out, placing each scoop onto the coconut. Roll each sticky portion in the coconut until well coated. Shape these into balls.
5) Place the balls in the freezer to set.
Depending on size, this recipe will produce about 20 delicious & nutritious Superfood Berry Balls.
